Prepare to plan or plan to fail. Sundays are for grocery shopping and getting our week ready. With 5 kids we have to plan or they will end up wanting snack after snack. It’s like they forgot what their school stomach was like. If you don’t plan out your meals for the week you should start. Start small and plan till Wednesday and then eventually you can cover a whole week’s worth of meals.
Monday– Stir Fry. I love a good stir fry with all my favorite vegetables. I mix mine with broccoli, onions, peppers, carrots, and basically whatever I have on hand. I use my rice cooker. Ever since I purchased this rice cooker, it’s made my life so much easier since I purchased this rice cooker. It’s a pretty simple and easy meal to get all your veggies in.
TUESDAY– Jackfruit Carnitas Tacos
Jackfruit is a great meat alternative. I marinate the jackfruit overnight with my favorite chipotle sauce then I slow cook it for an hour and then add onions and peppers, then top with some salsa.
WEDNESDAY– 3 Bean White Chili hits the spot every time. My hubby perfected this soup. It’s spicy and is packed with flavor and very filling.
THURSDAY– Avocado Pesto Pasta– this pasta is our go-to in my home and if you love avocado and pesto it’s the best of both worlds!
FRIDAY– Homemade Pizza Night– we love the vegan dough from Trader joes we grab a few of those and the kids have their own little pan pizza and we make our vegan veggie pizza loaded with veggies and pineapple because yes pineapple belongs on pizza.
Weekends- This weekend will be my daughters birthday so we will most likely be snacking on cake, pizza or some sort of party food because mama aint cooking.
