Since going plant-based I haven’t had egg salad sandwiches and I’ve been dying for one so bad!

This combo hit the spot it’s like an egg salad/tuna salad sandwich. The great thing is this can be served on toast, in a wrap, or even on crackers. You can add in different veggies and seasonings to even personalize it to your liking. If you’re using toast get sourdough my new favorite is trader Joes cracked wheat sourdough bread.

HOW TO PREP FOR CHICKPEA TOAST

Chickpea toast is the easiest thing to make. Get creative and load up on lots of veggies 

INGREDIENTS:

  • Cracked Wheat Sourdough Bread
  • 1/4 cup Vegan Mayo
  • 1 Cup Cherry Tomatoes
  • 2 Mini Sweet Peppers
  • 1/2 Cucumber
  • 1/4 Cup Shredded Carrots
  • 1 Can Garbanzo Beans
  • 1 TBSP Salt
  • 1 TBSP Pepper

Optional toppings:

  • Jalapenos
  • Onions
  • Cilantro
  • Everything But Bagel seasoning

How to make Chickpea toast in these easy steps:

  • Prep all veggies you plan to use.
  • Preheat oven to 350 if using bread for extra crunch. I Warm for 5 minutes.
  • Rinse & drain Chickpeas.
  • Smash Chickpeas,
    add mayo, veggies & seasonings.
  • Mix all together and spread on toast, lettuce, or wraps.

  • 2-4 Slices Cracked wheat sourdough bread
